57473356.jpgEaster cake is one of great and tastiest holidays! Due to it you can invite and treat everyone with dainties… We decided to share some traditional recipes with you.

So, what holiday of Easter without easter and eggs? This batch is a sweet product which suits both meat with horse-radish garnish and a dessert with tea!
Here is the recipe of this traditional batch which passes from generation to generation:

” COGNAC EASTER CAKE WITH RAISIN ”

1.200 kg flour
50 g yeast
2 glasses of milk

Shake up:
250 g sugar
8 yolks
Combine it with above-mentioned components and mix carefully.
Add:
4 egg-whites
300 g margarine
200 g raisin
1/2 teaspoons salt
3 table spoons cognac
Dried peel of one orange
1 bag vanilla sugar

Mix all up to homogeneous paste and put in warm place. Then put dough in baking cups and bake to readiness.

EASTER CAKE:

1 kg flour
1,5 glass of milk
350-400 g butter
2 glasses of sugar (350-380g)
Pinch of salt
1glass raisin
1,5 packs of dry yeast
8 eggs
1 bag of vanilla sugar (15g)
Glaze:
150 g sugar
1 egg-white
2 table-spoon water
Pinch of salt

Stage-by-stage preparation:

All products should be warm! Warm up milk and dissolve yeast in it, add 1 glass of sugar and 500 g flour. Knead carefully, cover and put in warm place for 30-40 minutes
.
When the dough is ready, add salt, yolks, shaken up with sugar and butter. Mix carefully, add egg-whites shaken up in foam and the remained flour.

Make dough. The better you knead, the fluffier cakes will be! Put dough in warm place. When dough increases in volume 2 times (somewhere in 1-1,5 hours), add raisin. Carefully to mix.

Spread out dough in prepared baking-cups (1/3 of a cup), cover with a towel and leave for a while. Then put in warmed up oven (180С) and bake during 30-50 minutes (depending on an oven).

Take out ready easter cakes from an oven and cover with glaze until they are still warm.

Mix all components to cook glaze. Put a paste on a water bath and shake up in a mixer to receive dense and steady foam.

Following necessary dish are EGGS!

“KINDER-SURPRISE”

Products:
Egg shell is a baking cup
1 glass flour
0,5 glass sugar
3 yolks
150 g margarine
0,5 glass raisin
2 table spoons cognac
2 table spoons nuts
Vanilla
Soda

For glaze:
3 egg-whites
1 glass sugar
Powder for easter cakes.

To prepare original “Kinder-surprise”, it is necessary to mix flour with sugar, yolks, margarine, raisin, cognac, nuts, vanilla and soda. Make liquid dough. Grease shell from within with vegetable oil and strew with flour. Fill in shells 0,5 sm below top.

Pour a thick layer of large salt on a baking tray, pour eggs in salt. Bake in an oven for 30 minutes. Then peel eggs cautiously, to dip in white glaze ( to shake up 3 whites with a glass of sugar) and sprinkle with powder for easter cakes. Lay out ready eggs in a basket around Easter cake.
